Carlotta was born in Siena in 1985 and first became interested in cooking at the age of fifteen, following in the footsteps of her grandmother and mother, both great cooks.

She embarked on her career in professional cooking in 2013 when she attended a gourmet cooking course at IFSE, regarded as one of the best schools in Italy.

In 2014 she graduated with honors and was immediately chosen to take part in a cookery competition at EuroCucina in Milan to select cooks who would become the face testimonial of Bosch.

The following summer she took part in the TV show “La Dolce vita di David Rocco” which was broadcasted in more than 100 countries around the world and dedicated an entire episode to the Pometti estate and its culinary tradition.

In the summer of 2015, Carlotta was chosen to take part in the Italian version of the reality show “Hell’s Kitchen” hosted by chef Carlo Cracco.

In the autumn of 2015 she spent nearly two months learning the art of pastry in the 2-star-Michelin restaurant “il Pagliaccio” in Rome, under the guidance of pastry chef Marion Litche.

Drawing on a decade of experience with her grandmother Marisa, who passed on her legacy of popular Tuscan cuisine, Chef Carlotta has stayed loyal to the culinary traditions she inherited but has enriched her menus with delicacies obtained using more modern techniques. Favourites such as handmade “pici” and tortelli dumplings, exquisite desserts (dry or soft), bread and pizza cooked in a wood burning oven are always on the menu, along with the tastiest dishes you could even dream of. At La Selva you will be transported by the flavors of the local specialties and experience this magical world firsthand by taking cooking lessons with Chef Carlotta, a practical opportunity to create a complete menu from starter to dessert.

The Villa disposes of a large and well-equipped kitchen, a wood burning oven and an outside grill.
Guests can choose whether to eat inside the stylish lounge or the large rustic dining room offering or, alternatively, outside under the loggia by the pool.
It’s in this wonderful setting that Chef Carlotta creates her one-of-a-kind, sophisticated delicacies, using techniques such as sous-vide and steam cooking.
The menus, which are chosen specially for you and prepared using organic products from our short supply chain, can be paired with our tasting wines.
